I’ve told you before that I’m not a huge football fan but I do LOVE a good game day party: the food, the atmosphere, and the fun! Any cheering I do for teams is based solely on the uniform color I like the best {wink}. This pear cheesecake dessert quesadilla recipe is a perfect addition to your game day spread … but be prepared for these sweet quesadillas to disappear fast! The football crowd will love seeing something besides the standard chips and pretzels on the food bar!
I popped in to Costco and grabbed a package of uncooked TortillaLand tortillas from the refrigerated section. {Make sure you grab TortillaLand tortillas the next time you’re at Costco and share what you make with them for the chance to win a Costco gift card. Get all the details below!} These tortillas are a family favorite! They’re uncooked but take just a minute to cook up in a pan and the authentic, delicious, fresher taste and texture is the best. Plus, TortillaLand tortillas have only five ingredients – wheat flour, water, canola oil, salt, and sugar – so I feel good about feeding them to my family.
To make pear cheesecake dessert quesadillas, you’ll need these ingredients in addition to TortillaLand tortillas:
12 ounces whipped cream cheese
1/2 cup brown sugar
1 teaspoon vanilla
cinnamon
fresh pears, and
butter.
In a pan over medium heat, cook the tortillas according to package instructions, watch them puff up as you cook them, and set them aside.
Once the tortillas are cooked, mix together the whipped cream cheese, brown sugar, and vanilla. I use an electric mixer to do this but since the cream cheese is already whipped, you can also easily do this by hand.
On one tortilla, spread a layer of the cream cheese mixture. Spread it 1/4 to 1/2 inch thick.
Cut the pears into thin slices, about 24 slices per pear. {To make it easy, I use my apple slicer to cut the pear then cut each slice into three.}
Top the cream cheese mixture with the pears …
… sprinkle with cinnamon, and place another tortilla on top.
In a pan over medium-low heat, melt a small bit of butter {about 1/4 of a tablespoon} and cook the dessert quesadilla until the cream cheese mixture is warmed and the tortillas are slightly crisp, flipping once.
Cut into quarters …
… and serve!
A platter of these dessert quesadillas will be gobbled up in no time but any leftovers can be refrigerated and eaten the next day. They’re delicious cold too!

So I’m going to make these and I have a question about the tortillas…..I have not bought them at Costco before because they have such a big package and shorter expiration date, and it just occurred to me, I can probably freeze them huh? If I can figure out how to pin from my iPad I’ll be pinning them as well.
You probably can freeze them and then thaw before cooking. Or, you could cook up a whole batch and freeze them like that. We love them and my kids go through that big package so fast!
Pears are one of my favorite fruits and yet I’ve never tried them in a quesadilla. Cheesecake + quesadillas = one happy girl. 🙂 Pinned… can’t wait to try it!
