Holiday meals are easy, aren’t they? You know you’re cooking a ham or a turkey or one of the other traditional dishes your family loves. It’s all the other meals in between that get tricky! This Mexican breakfast casserole recipe is the perfect breakfast dish for the holidays … and you can even get it ready the night before so there’s very little prep work in the morning.

TortillaLand tortillas are the main ingredient in this delicious casserole. Bought in the refrigerated section at Costco, you cook these fresh uncooked tortillas yourself and they’re ready for any dish in just sixty seconds.

Pop them in a medium heat pan, let them cook about thirty seconds per side {watch them puff as they cook}, and you have fresher tasting tortillas for your meal. These tortillas only contain five ingredients {wheat flour, water, canola oil, salt, and sugar} and have a great taste and texture.

Prepare twelve TortillaLand tortillas according to package instructions …

… and during that preparation, cook one package of ground pork sausage with one chopped onion. Cook until the meat is no longer pink and any grease has been cooked off.

Remove from the heat and add one can of diced tomatoes and one small can of diced green chiles. Mix well.

In a 9×13 baking pan, lay four cooked TortillaLand tortillas on the bottom then cover with half of the meat mixture. Sprinkle one cup of mexican style cheese over top then lay four more tortillas on top and repeat. Finish by covering with the last four tortillas.

{At this point, you can cover the dish and let it sit in the fridge overnight if you want to make it ahead.}

Whisk together eight eggs and two cups of milk then stir in 1/2 teaspoon salt and 1/4 teaspoon pepper and pour over the contents in the pan, spreading evenly.

Bake uncovered at 350 for 45-50 minutes or until cooked through {poke a knife in the center and be sure it comes out clean}. Sprinkle immediately with 1/4 cup cheese then let sit for about ten minutes.

Cut into squares, top with guacamole, and serve. Your guests will love this hearty breakfast casserole and you’ll love the ease!
