A Carrot Cone for Easter

With spring {finally} here, we’re ready for ice cream and popsicles and summer desserts.  You too?  Skip the heavy desserts this Easter and serve the kids a carrot cone!  They’ll love eating like the Easter Bunny and this refreshing treat is sure to be a crowd pleaser!

To make a carrot cone {or a whole batch}, you’ll need sugar cones, orange ice cream or sherbet, green candy like licorice or sour straws or anything that can be transformed into a carrot top, candy melt, and orange food coloring.

In a microwave safe bowl, melt the candy melt according to package directions and add orange food coloring until you have the desired color.  Using a knife, spread it onto the cone then place it in the fridge or freezer to harden.

While the cone is hardening, prepare the carrot tops.  Green licorice or green sour straws would be perfect for carrot tops but if you can’t find those, use any green candy and create your own.  I used a rolling pin to press two green candies together then made slices in the top.  Use candy melt to stick pieces together if you need to.

Once the candy melt has hardened on the cone, add a scoop of orange ice cream or sherbet …

… and pop the carrot top on!
