Has spring hit where you live?  Despite a lot of rain and some really crazy fluctuating temperatures, I think spring is here in Texas.  If the wildflowers are any indication, it’s definitely here!  The sides of highways are covered with a carpet of the most beautiful flowers in blue, pink, white, and red.  Every year I forget how beautiful it can be!

In April, I planned a little fiesta that would be perfect for Cinco de Mayo and shared the recipe for a delicious layered chicken black bean quesadilla …
