Toasted Marshmallow Hot Cocoa

During the winter months, I love hot cocoa … and so do my kiddos!  They ask almost every day if they can make a cup of hot chocolate!  This toasted marshmallow hot cocoa is a simple way to enjoy the rich drink and adds a fun gourmet touch to an ordinary cup of cocoa!

Be sure to use an oven-safe mug.  Dip the rim in corn syrup and then dip it into a dish of brown sugar.

Fill the cup with your favorite hot cocoa, store bought or homemade, being careful not to let the cocoa touch the sugared rim {or the sugar will melt right into the cocoa before it has a chance to caramelize in the oven}.

Place a few mini marshmallows or a jumbo marshmallow {my favorite} on top of the cocoa and place it under the broiler, keeping it a few inches away from the actual broiler.  Watch very carefully to be sure the marshmallow doesn’t burn or catch on fire.  Be prepared to lift it out quickly.

Alternatively, you can use a torch {like a creme brulee torch} to brown the marshmallow but you’ll also need to watch it carefully to prevent it from burning.

Once browned, use an oven mitt to remove the cup from the oven and let it cool slightly before serving.

The brown sugar will caramelize on the rim and slowly melt as you drink the cocoa.
