Pot of Gold Popcorn

St. Patrick’s Day is right around the corner and I always love making the kids a fun snack or a sweet treat for different holidays.  This pot of gold popcorn, drizzled in minty chocolate and decked out with edible gold stars, is the perfect treat for all the little leprechauns in your house!

To make pot of gold popcorn, pop a large batch of plain unsalted popcorn and spread it out {in a single layer} on a cookie sheet lined with wax paper.

Melt half a package of mint chocolate chips {I melted them in the microwave, stirring every thirty seconds until the chocolate chips were fully melted} then drizzle the melted chocolate evenly over the popcorn …

… and sprinkle with edible gold stars {affiliate link}.  Let the chocolate drizzle harden {the stars will stick as the chocolate hardens} …

… then break it up and serve in a cute shamrock mason jar or in little leprechaun treat cups!  {This would make a great neighbor gift!}

The mint chocolate flavor is such a delicious combination with the popcorn and this batch of popcorn got gobbled up in no time at all!
