Limoncello Pasta

This limoncello pasta recipe was first shared on instagram as a sponsored social media post for Skinner and I wanted to share it here as well.  All thoughts and opinions are my own.

This summer, I had a fun and memorable dinner in Salt Lake City with some of my favorite bloggers.  During a vast sampler meal at a local Italian restaurant, we tried a flavorful limoncello pasta that I just had to recreate at home!  The flavor was light and slightly sweet while also salty and buttery and it was perfect served over thin noodles.  It makes my mouth water just thinking about the flavors!

I think this version of the limoncello pasta is equally delicious and I’ll be making it again this week.  If you try it, I’d love to hear about any changes or tweaks you make!  I think it would be delicious with grilled chicken on top or served on the side.

To make this recipe, you’ll need

one package of thin spaghetti

1 1/2 cups limoncello {I know nothing about limoncello but any brand should be fine}

1/2 cup butter

1/2 cup heavy cream

1/2 cup grated parmesan cheese

 1 fresh lemon, and

salt and pepper to taste.

Cook the pasta according to package instructions.

While the pasta is cooking, heat the limoncello to boiling and let it boil for about two minutes.  Add the butter, reduce the heat to medium-low, and stir until the butter is melted.  Squeeze the juice from the lemon into the pan.  Add the parmesan and stir until the cheese has fully melted.

Remove from the heat, stir in the heavy cream, and add salt and pepper to taste.  Pour over the drained pasta and you have a delicious pasta dish that’s perfect for entertaining or just a regular weeknight meal at home!
