Years ago, my kids had dessert at a restaurant and I loved the presentation of their ice cream sandwich dippers. It was so clever and so fun for kids! I’ve made it for company a number of times and, since ice cream is the perfect summer dessert, today I want to share it with you along with a recipe for homemade caramel churro sauce. Yum, right?
I’ve told you before that I love International Delight Coldstone Creamery Sweet Cream creamer {say that ten times fast} and now International Delight has three new Coldstone Creamery flavors: Churro Caramel, Hot for Cookie, and Founder’s Favorite.
I used the Churro Caramel flavor to make a caramel dipping sauce for the ice cream sandwiches. The sauce is simple to make and deliciously sweet!
To make it, you’ll need:
1 cup International Delight Coldstone Creamery Churro Caramel coffee creamer
1 tablespoon butter
1 teaspoon salt {I used Himalayan pink salt}
1 teaspoon corn starch
2 teaspoons cold water
In a small saucepan, heat the creamer, butter, and salt over medium to high heat until boiling, stirring constantly. Mix the cornstarch and cold water and mix well. Add to the saucepan and stir until the sauce begins to thicken.
Let cool completely. The sauce will continue to thicken as it cools.
To serve the ice cream sandwich dipper dessert, cut the ice cream sandwiches in half and then into triangles or rectangles. Place the pieces on a plate or small platter and serve with small containers filled with different dippers. Ramekins work well or you can use small disposable sauce containers.
I served our ice cream sandwich dippers with sprinkles …

… and the delicious homemade churro caramel sauce.
