Homemade Rolo Ice Cream

 Last summer, my mom gave me a really cool hand-me-down: an electric ice cream maker.  I was so excited and had dreams of making all sorts of homemade ice cream for the kids all year long … and then that machine just sat in my storage closet.  Last week I finally dug it out and whipped up a batch of homemade rolo ice cream … and now I can’t wait to try some other flavors.  But before I do, let me tell you how I made this delicious ice cream {and how we cleaned up after}!

To make rolo ice cream, use an electric mixer to combine 3/4 cup cocoa, 1/2 cup granulated sugar, 1/3 cup packed brown sugar, a pinch of salt, 3 cups heavy cream, 1/2 tablespoon vanilla, and one package of rolo unwrapped minis.  Mix it until all of the ingredients are combined well.

Pour the mixture into your ice cream maker and follow the manufacturer’s instructions to transform that liquid mix into delicious homemade rolo ice cream.

When the ice cream is at the end of the cycle, slowly add in chopped rolo candies until well mixed.

While you’re waiting for the machine to do its work, make some simple chocolate-dipped cones.  Because trust me, rolo ice cream served in a chocolate-dipped sugar cone is about as good as it gets.

Simply melt chocolate chips in the microwave, dip the cone into the melted chocolate, allow the excess to drip off, then place the cone {chocolate side down} onto wax paper until the chocolate is hardened.  I like to pop the cones in the fridge to speed the process up.

Serve the cones and then wait for the mess … because I can assure you it’s coming.  Kids plus ice cream plus summer heat equals a bit of a disaster!

Thank goodness we’ve got Wet-Nap Antibacterial Hand Wipes from Walmart {who doesn’t love their everyday low prices?} to clean up all those little faces and hands.  They’re softer than before, stronger …
