Homemade Yogurt Muesli

In the summer, when fruit is cheap and plentiful, this homemade yogurt muesli is one of our favorite breakfasts.  We love to make a huge bowl of it, doubling or even tripling the recipe, and keep it in the fridge for daily breakfasts {and a few snacks, too}.  We could eat it every day, all summer long if we could just keep the bowl full!  You can customize this recipe by adding your favorite seasonal fruit, switching up the flavor of yogurt, or tossing in some flax or chia seed for a little extra boost.  Experiment a little to see what flavors you love best.

Homemade Yogurt Muesli Recipe

3 cups quick-cooking rolled oats

1 1/2 cups low-fat strawberry yogurt

1 cup orange juice

1/3 cup light cream

2 tablespoons honey

1 1/2 cups each fresh raspberries and diced strawberries

1 cup fresh blueberries

1 medium apple, peeled, cored, and coarsely grated {I usually use a Red Delicious apple but a Granny Smith apple adds a nice, tart taste}

In a large bowl, combine the oats, yogurt, orange juice, cream, and honey. Let stand 5 minutes to soften.

Gently fold in the fresh fruit. Cover and refrigerate overnight {or eat it immediately, if you want … it just won’t be quite as creamy and the oats won’t be completely softened but it’ll still be delicious}.

    I love this…when I lived in Switzerland I ate this several mornings before heading to work…thanks for the recipe, I will try this when I am back home again!!

    Lukey not a fan? I have this recipe from you years ago and use it ALL the time. Me and Erin go crazy for it. The boys not so much, although the like it better warm

    Thanks for sharing Randi! I love oatmeal, yogurt and fruit together. Here is one of my recipes …. two packs of plain instant oatmeal that you make in the microwave, a container of vanilla yogurt on top of oatmeal and mixed fruit on top of the yogurt. I’ve even used frozen mixed berries and just thawed them in the microwave. You get the warmth from the oatmeal with the cool from the yogurt and berries. I bet this would be good stirred together and served cold as well.
