Pistachio Cranberry Goat Cheese Log

 After the busyness of Thanksgiving week and all the extra cooking and company, today was set aside for relaxing and enjoying long, lazy moments.  We went to a couple of shops to do a little Black Friday shopping and now we’re heating up Thanksgiving leftovers and enjoying a little happy hour with this pistachio cranberry goat cheese log.  The sweet and savory combination of this recipe is delicious and it’s quick and easy to make, which is always a favorite for me.  And since goat cheese doesn’t expire quickly, you can keep the ingredients on hand for a last minute appetizer any time you need it!

 Goat Cheese with Pistachios and Cranberries

 2 tablespoons roasted pistachios, coarsely chopped

2 tablespoons dried cranberries, coarsely chopped

1 8- to 10-ounce fresh goat cheese log

Crackers or bread slices, for serving

 On a large plate, combine the chopped pistachios and cranberries, mixing well.

 Roll the goat cheese log in the fruit and nut mixture to coat it completely on all sides.  Serve alongside your favorite crackers or bread slices, toasted or untoasted.  

This appetizer pairs perfectly with a nice glass of wine!

Experiment with variations of this recipe: substitute chopped dried mango and chopped almonds or pecans for a fun twist on this simple treat.
