This week we received an electronic media kit with photos taken by the professional photographers at the Sandra Lee event. I thought it would be fun to share a few more photos as well as two recipes from our luncheon {both delicious and perfect for summer entertaining}.

I love this view of the room. The dishes are so fun and so pretty and there’s something just perfect about red and white together.
I soaked in every word Sandra spoke. She grew up in poverty and really made something of herself but she’s never forgotten her roots or the way they shaped her. It was inspiring.

Okay, enough of the photos for today {but I may have to periodically relive this awesomeness}.
I loved the luncheon that was served on Friday and I’m adding both of these recipes to my entertaining menu this summer. You’ll have to let me know if you try them too. {The pasta salad is one of Sandra’s faves.}
Angel Hair with Roasted Red Peppers, Feta, and Herb Dressing
1/2 cup extra virgin olive oil
1/3 cup finely chopped fresh herbs (basil, oregano, thyme)
2 tablespoons lemon juice
2 tablespoons water
1/2 teaspoon salt
freshly ground black pepper
1 package (16 ounces) angel hair pasta
1 jar (12 ounces) roasted red peppers
1/4 red onion, slivered and soaked in cold water
4 ounces crumbled feta cheese
1 can (2.5 ounces) sliced ripe olives
For dressing, place oil, herbs, lemon juice, water, salt, and black pepper in a jar. Close lid tightly and shake until blended. Set aside.
Cook pasta according to package directions. Drain and place pasta in a large bowl. Add dressing to warm pasta and toss to combine. Add remaining ingredients. Toss gently to combine. Serve at room temperature.
Summer Berry Salad
1 quart fresh strawberries
1 (4.5 ounce) package butter and tango lettuces
1 pint fresh blueberries
1/2 (4 ounce) container crumbled feta cheese
prepared balsamic vinaigrette
Hull strawberries and cut in half. Arrange lettuce leaves on a serving platter. Top with strawberry halves and blueberries; sprinkle with feta cheese, and drizzle with desired amount of vinaigrette.
