When I was first out of college and living completely on my own, I made this microwave teriyaki potato recipe all the time. It was a quick and easy side dish and perfect for a novice in the kitchen. I made it again recently and was reminded how good it is … and the kids loved it. If you need a simple recipe for dinner, this one pairs perfectly with most things.
To make this microwave teriyaki potato recipe, you’ll need red potatoes, butter, bottled teriyaki sauce, garlic salt, italian seasoning, and pepper. {Full measurements and complete instructions can be found in the printable recipe card found further down in this post.}
I often increase almost every ingredient in the recipe so feel free to use a liberal hand when you’re mixing it up. The results will be delicious no matter what. Depending on the type of teriyaki sauce you use and whether it’s thick or thin, you’ll definitely want to alter the amount used. A thinner sauce doesn’t stick to the potatoes as well so I always use more.
To prepare the dish, cube the potatoes into fairly small pieces. I like to make them about half an inch and quite uniform so they cook quickly and evenly. You can cut them a bit larger but I wouldn’t go beyond inch-size cubes.
Toss in all the other ingredients, stir it all up, and cook the potatoes in the microwave according to the instructions below.
The final result is a saucy, delicious side dish, full of flavor.
It’s delicious with chicken or beef and leftovers heat well in the microwave. I often prefer it the second day when those flavors fully absorb into the potatoes so store any extras in an airtight container in the fridge.
