Crustless Quiche

I love, love, love the book Alexander and the Terrible, Horrible, No Good, Very Bad Day.  And I’m so excited that the movie will be released on October 10th!  The movie has such an all-star cast with Steve Carell and Jennifer Garner at the helm.  This crustless quiche recipe will be featured in the movie and I thought it would be fun to share it here as we all sit tight and wait for the movie’s release!  Before you run off, be sure to grab the free recipe printable below.

To make this quiche, you’ll need 1 tablespoon unsalted butter, 2 teaspoons olive oil, 1/2 onion {diced}, 2 cups sliced mushrooms, 1 10-ounce package frozen chopped spinach {thawed and drained}, 4 eggs, 1 cup whole milk, 1/2 cup heavy cream, salt and pepper, and 1 1/2 cups shredded swiss cheese.

Preheat the oven to 350 degrees.  Grease a 10-inch pie pan {or make it in a 8×8 pan}.  

Heat the butter and olive oil in a skillet over medium-high heat.  

Stir in the onion and sliced mushrooms and cook until soft, stirring occasionally. Add the spinach and cook until the moisture evaporates.  Set the skillet aside.

In a bowl, whisk eggs, cream, milk, salt, and pepper.  Add the cheese, spinach, onion, and mushrooms.

Pour the mixture into the greased baking dish and bake in the preheated oven until lightly golden and set in the center {about 30-35 minutes}.

    This is a great recipe! I have never heard of having a ‘crustless’ quiche – looks delicious!
