Summer break is quickly coming to an end, but here in Texas, summer weather will last for another two months {at least}. And one of my favorite things about summer is iced coffee. I like to go out for coffee but I also love the ease of having it at home. I get the kids occupied, then sit down with a magazine and a glass of International Delight Iced Coffee. And if I want iced coffee with a twist, I whip up this simple recipe for Caramel Macchiato Frappe with Espresso Whipped Cream.
The key ingredient in this recipe is International Delight Caramel Macchiato Iced Coffee. If you like another flavor better, use it! This recipe works well with any of the International Delight Iced Coffee flavors but Caramel Macchiato is my favorite!
Using a blender, blend together 1 cup of Iced Coffee with 1 cup crushed ice and blend until it’s well mixed. If you like it a bit slushier, add more ice until you get the consistency you want. I love a strong coffee flavor so I also add 1/2-1 teaspoon of instant coffee to the mixture.
With an electric mixer, whip 1 cup of heavy whipping cream until peaks form and then slowly whip in 4-5 tablespoons of strong brewed coffee.
Pour the iced coffee mixture into a tall glass and top it with a dollop of whipped cream and a drizzle of caramel syrup. Depending how thick your coffee mixture is, the whipped cream may immediately sink in to the drink but don’t worry … the blend of flavors is amazing!
Now find a quiet spot in the house, whip up a Caramel Macchiato Frappe, and enjoy these final summer days!
