Crockpot Ranch Chicken Salad

If I can use my crockpot to make a meal, I’m all in.  Do you feel the same?  I love the ease and I absolutely love having dinner ready at the end of the day.  Chicken salad isn’t a recipe traditionally made in the crockpot but this crockpot ranch chicken salad will quickly become a favorite.  The flavor is delicious and the ease of this recipe makes it absolutely perfect.

To make crockpot ranch chicken salad, you’ll need

4-6 chicken breasts {frozen is fine}

1 package of dry ranch dressing

1/4 cup water

1 cup chopped celery

1 cup mayonnaise

salt and pepper to taste.

Place the chicken, dry ranch dressing, and water in the crockpot and cook on low for 4-8 hours or until tender and cooked through.  Use a slotted spoon to remove the chicken from the crockpot, shred or chop it into small pieces, and place it in a bowl.

Toss in the chopped celery …

… and stir in the mayonnaise and salt and pepper.  Add more mayonnaise, if desired, and cover and refrigerate until ready to serve.

Serve with croissants or fresh rolls for a delicious lunch or light dinner.
