Coconut Mint Spritzer

Cold, delicious drinks are a favorite of mine in the summer months.  Maybe it’s because Dallas is in a perpetual heat wave and cold drinks are a survival tactic, but I love whipping up fun and flavorful concoctions.  This coconut mint spritzer is so refreshing that my mouth waters just thinking about it.  Don’t skip the fresh mint and the muddling … it’s the key step!

To make one coconut mint spritzer, you’ll need a small bottle of vanilla cream new york seltzer, two tablespoons sugar free coconut syrup, and six to eight large fresh mint leaves.  {You can find the seltzer and coconut syrup at World Market.}

Place the mint leaves in a bowl and add the two tablespoons of coconut syrup over top.  Muddle the mint leaves until the juices are pressed completely out of them.

Pour the vanilla cream seltzer into a tall glass and strain the coconut mint mixture into the glass, being sure not to let any mint pieces slip in.  Stir gently.

Add a few cubes of ice to the glass and garnish with mint or fresh berries to add a bit of color.

The muddled mint adds such a fresh pop of flavor to this delicious summer mocktail!

    You are the drink queen, Randi. I can’t wait to try this. Can I find the vanilla cream seltzer in the grocery store?

      You can probably find it at certain grocery stores – likely stores more like Sprouts, Whole Foods, Central Market. I get it at World Market.
