Blueberry Thyme Baked Brie

Brie is one of my favorite cheese varieties and I love adding a few easy ingredients to dress it up a bit and turn a simple appetizer into something that looks gourmet.  This blueberry thyme baked brie recipe is so simple and so delicious.  If you love a sweet and savory combination, this will be a new favorite.  Be sure to pin it for your next party or gathering!

To make this puff pastry wrapped baked brie, you’ll need one round of brie, a sheet of frozen puff pastry {thaw it according to package instructions}, 1/4-1/2 cup blueberry preserves or jelly, and 5-6 sprigs of fresh thyme.

Unfold the sheet of puff pastry then roll it out slightly until it measures about 14 inches across.

Place the blueberry preserves in the center of the sheet and spread with the back of a spoon until it’s about the same size as the brie.  Sprinkle with the leaves from the sprigs of fresh thyme.

Place the round of brie on top of the preserves …

… then wrap all the sides up and attach them on the bottom of the brie, cutting off any extra puff pastry.  Turn it over and place on a lightly greased baking sheet.  Using a small pastry cutter, cut a few leaves or other shapes from the excess puff pastry and place them on top.  This is obviously an optional step but it’s a simple way to add a bit of elegance to the appetizer.

Bake at 400 degrees for 20 minutes then let sit about 10 minutes before slicing in or longer if you want the cheese to be less oozy.

Serve in wedges with buttery crackers for a delicious appetizer that pairs perfectly with happy hour!
