‘Tis the season of entertaining and ’tis also the season {for me, at least} of looking for simple ways to wow my guests while not spending a pile of time in the kitchen. Pepperidge Farm Puff Pastry is the perfect way to create a recipe that looks and tastes great while being simple to make. Grab the ingredients and try this fig rosemary brie en croute. I promise, it won’t disappoint!
To make this elegant appetizer, you’ll need Pepperidge Farm Puff Pastry {found in the freezer section of grocery stores nationwide}, fig preserves, fresh rosemary, a round of brie, and one egg.
Let one piece of Pepperidge Farm Puff Pastry thaw for about 40 minutes, then lay it on a lightly floured surface and roll it out until it measures about 14 inches square. Trim the corners to form a circle and save the trimmed pieces.
Spread 1/2 cup fig preserves over the center of the puff pastry and sprinkle with 1/8 cup of chopped fresh rosemary.
Lay the round of brie over top. Mix one egg and one tablespoon water together then brush the edges of the pastry circle with the egg mixture. Fold the edges up and press them together to seal.
Turn the pastry-wrapped cheese over and set on a lightly greased cookie sheet. Using a small cookie cutter and the pastry scraps, cut small stars and layer them on top of the cheese. Brush lightly with the egg mixture …
… then bake at 400 degrees for 20 minutes and let sit for 30-40 minutes before serving.
When you slice in, the cheese will run out. The longer the brie en croute sits, the more firm the cheese will get. Cut in wedges and serve on crackers. The combination of fresh rosemary with sweet fig is delicious and the appetizer looks so much more elegant than a plain cheese and cracker platter. One of my favorites from the party was rolo-stuffed pastry cups. Our hostess baked Pepperidge Farm Puff Pastry Cups according to the package directions, let them cool slightly, then placed a rolo in each one, popped it in the oven for less than a minute, and served them with a scoop of vanilla ice cream, a drizzle of caramel syrup, and a sprinkle of mini chocolate chips. They were divine! And does it get any easier than that?
