Apple-Shaped Hand Pies

With the start of school approaching and the fall season on its way, I have apples on my mind.  Apples just seem like the perfect symbol for this season.  And apple-shaped hand pies bring the perfect flavor for the season too!  These tiny pies make a great back to school treat or a sweet dessert for a cool fall day … and refrigerated pie dough means you can whip them up on a whim!

To make these simple hand pies, you’ll need refrigerated pie dough and cans of pie filling {I used cherry pie filling and caramel apple pie filling}.  Use a mason jar or a large glass to cut circles, two circles for each pie.

Place a spoon full of your favorite pie filling in the center of a circle …

… then place another circle on top, poke a piece of pretzel stick into the top between the two layers, and press a fork around the edges to crimp them together.

Place on a greased cookie sheet and bake at 350 degrees for 17-20 minutes.  {If you want the pastry to get a nice golden color, brush the pastry with an egg wash before baking.}

Before serving, add a fresh mint leaf to give the hand pie a true apple appearance.
