It’s almost Thanksgiving! Time for turkey, mashed potatoes and pumpkin pie, and lots and lots of stuffing! Stuffing is one of my favorite parts of Thanksgiving dinner. If it’s one of yours too, you’ll have to pin this recipe for apple cranberry stuffing. It’s not only delicious but it’s super easy to make {it starts with boxed stuffing mix but we’ll keep that our little secret}!
To make this apple cranberry stuffing recipe, pour two boxes {6 ounces each} of turkey stuffing mix in a bowl.
Pour 2 cups College Inn chicken broth over the dry stuffing mix, stir, and let sit while you prepare the rest of the ingredients. {College Inn chicken broth can be found at your local Walmart.}
In a pan, melt 1/2 cup butter and add 1 peeled and diced red or green apple, 3 diced celery stalks, 1 diced onion, and 1/4 teaspoon pepper. Saute over medium heat until soft and translucent but not browned.
Add the cooked mixture to the stuffing mix and broth in the bowl and add 1 cup dried cranberries, 1 cup pecan halves, and 1 tablespoon fresh thyme.
Mix well and spoon into a 9×13 buttered baking dish. Cover with foil and bake at 375 degrees for 20 minutes.
The broth and vegetables make this stuffing moist and delicious and the sweet and savory blend of flavors is perfect.
Your guests will be coming back for seconds … or thirds!
