I’m hosting my annual soup swap today and I wanted to share the soup recipe that I’ll be swapping with my friends: creamy, rich roasted cauliflower soup. This recipe is one of my favorites and while you might think of cauliflower as being a bit bland in flavor, this soup is anything but. Full of rich flavor, it’s thick and delicious and is perfect paired with slices of french bread for lunch or dinner.
We eat this delicious soup a couple of times a month, especially during the winter months. It’s quick to make and it’s delicious. The roasting of the cauliflower and onions lends a delightful earthy flavor, making this recipe the perfect comfort food for a chilly day. That said, because it’s also fairly light, we love this soup all year round, even on the hottest of summer days.
Roasted Cauliflower Soup Recipe
2 tablespoons extra virgin olive oil
1 white or yellow onion, chopped
1 head of cauliflower, cut into large chunks
3 cups chicken broth
1 cup heavy cream
salt and pepper to taste
Preheat the oven to 400 degrees.
Place the onion and cauliflower pieces on a large greased baking sheet, drizzle with the olive oil, sprinkle with salt and pepper, and roast until golden and tender.
Once roasted, place the cauliflower and the onions in a large pot on the stovetop. Add the chicken broth and bring to a boil over high heat.
Let boil for five minutes then reduce the heat to medium-low. Add the cream and season with salt and pepper.
Puree with a hand-held immersion blender and serve in bowls with a light drizzle of olive oil and pepper, if desired.
