Easy Taco Soup Recipe

I’m always looking for quick and easy dinner recipes and soup is a favorite in the chilly months.  Paired with a loaf of warm french bread, a hearty soup recipe full of protein and vegetables is good for the stomach and the soul.  This easy taco soup recipe is a favorite at our house.  It takes no time to throw together, has common ingredients you may already have in your fridge and pantry, and the whole family enjoys it, making it a perfect last minute dinner idea!

How to Make Easy Taco Soup

To make this taco soup, you’ll need the following ingredients {a printable recipe card can be found further down in this post}:

1 pound ground beef

1 chopped onion

1 package of taco seasoning

1 {15 ounce} can diced tomatoes

1 {15 ounce} can corn

1 {15 ounce} kidney beans

1 {15 ounce} can pinto beans

1 {15 ounce} can of water

In a large pot, brown the ground beef and the onion then drain to get rid of any excess grease.  

Add the taco seasoning, diced tomatoes, corn, kidney beans, pinto beans, and water.  Mix well.

Simmer until fully heated through.

Serve with corn chips, sour cream, and shredded cheese {or any other favorite toppers} and enjoy!

Can this recipe be prepared in an instant pot or crockpot?

You could easily cook this soup in the instant pot, browning the meat with the onion first then adding the other ingredients. 

You could also prepare it and keep it in the crockpot on low until you’re ready to serve it at dinnertime.

Can the taco soup be frozen?

This soup freezes very well.  Place leftovers or an extra batch of the soup in an airtight ziploc bag, remove all the air, and lay it flat in the freezer.  It’s the perfect way to have a quick and easy dinner on a rushed weeknight.

Taco Soup Recipe

Yield: 4-6 servings
Cook Time: 20 minutes
Total Time: 20 minutes

Quick and easy taco soup recipe, perfect for rushed weeknight dinners.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 package taco seasoning
  • 15 ounces canned diced tomatoes
  • 15 ounces canned corn, drained
  • 15 ounces canned kidney beans, rinsed and drained
  • 15 ounces canned pinto beans, rinsed and drained
  • 15 ounces water
  • various toppings such as sour cream, corn chips, grated cheese

Instructions

  1. In a large pot, brown the ground beef and chopped onion. Drain, if needed.
  2. Add the taco seasoning, diced tomatoes, corn, kidney beans, pinto beans, and water.
  3. Simmer until heated through.
  4. Serve with desired toppings.

    I just want you to know that we make this taco soup as part a weekly rotation. This is one recipe that goes over perfect with our entire family 100% of the time. We do add a can of nonalcoholic beer, to make a little more soupy.
