Tin Roof Ice Cream Pie

Nothing makes my kids happier than finding out we’re having dessert after dinner … especially when the dessert is topped in candy like this delicious tin roof ice cream pie!  This recipe is quick to make and it’s one you’ll want to add to the pin boards because it’s always a crowd-pleaser!  It’s the perfect recipe for guests.

Start with a pie plate {8 or 9 inch will work fine} and give it a good spray with to prevent the sticky crust from staying behind when you serve that first slice.  Nothing’s worse than a pie that won’t come out of the pan.

Pam Baking spray

PAM is my baking spray of choice because with up to 99% less residue build-up, PAM won’t leave a grungy surface like other baking sprays do.  Original, Butter, and Baking PAM all leave less residue than margarine or bargain brand cooking sprays while still allowing superior no-stick results.  I can’t stand having residue left behind, ruining my pretty bakeware.  The new formula also has zero calories per serving {something I really appreciate during the high-calorie holidays}.

Once your pie plate is sprayed, gather your ingredients.  You’ll need 1/4 cup peanut butter, 1/4 cup light corn syrup, 3 cups cornflakes, 1 quart softened vanilla ice cream, 1/2-1 cup peanut M&M’s {use holiday M&M’s for a festive touch}, and chocolate syrup.

In a food processor, pulse together the peanut butter, light corn syrup, and cornflakes until well mixed.  Press the mixture into the bottom and sides of the pie plate.  {A smart tip: to make this step easier, spray your fingertips with PAM so they don’t stick to the crust.}

Scoop the ice cream into the shell and then spread it out with a spatula until it’s fairly smooth.

Chop the peanut M&M’s in the food processor and sprinkle them evenly over the ice cream …

… and drizzle chocolate syrup on top.  Place the pie back in the freezer for an hour before serving.

Serve in wedges with warm chocolate syrup if you’re really in the mood for a treat!

    i am a sucker for cheesecake. even when i was young, i wanted cheesecake for birthdays because i didn’t like regular cake. i also love holiday cookies – sugar mostly.
