Have you jumped on the totchos trend yet?  My family loves totchos any time {they make a great, easy dinner!} but we especially love them when we sit down to watch the big game … or any sports game, for that matter.  And they’re best when taken up a notch with Avocados From Mexico and TABASCO® Sauce!  This tex mex totchos recipe is easy and delicious and you’ll want to pin it for your next gathering!  And be sure to keep reading because you won’t want to miss the other recipes I’m sharing from some of your favorite bloggers PLUS a giveaway for a chance to win $1000!  What a great way to start the new year!

The fun thing about making tex mex totchos is you can customize them any way you want.  I’m sharing my favorite toppers and a delicious guacamole recipe made with fresh Avocados From Mexico but you can add extras or alter these totchos to make them suit your family’s tastes.

For the totchos you’ll need

a large bag of frozen tater tots

1 can of sliced olives

2-3 tomatoes, diced

sliced jalapenos, fresh or pickled

1 cup shredded mexican cheese

sour cream, and

2 tablespoons chopped fresh cilantro.

To make the fresh guacamole, you’ll need

2-4 ripe Avocados From Mexico {you’ll only need 2 if you’re using a large size but more if the avocados are smaller}

1/2 lime

2 tablespoons diced red onion

1 tablespoon TABASCO® Sauce, and

queso fresco.

Layer the tater tots on a greased cookie sheet and bake according to package instructions.  If you like them crisp, add a few extra minutes to the cooking time.

While the tots are baking, prep the toppings and make the guacamole.  I love making fresh guacamole because it’s so versatile.  You can add it to anything, from breakfast to dinner, and it’s good with a huge combination of ingredients.

Peel and pit the Avocados From Mexico and mash them in a bowl …

… then add the juice from 1/2 lime, finely chopped onion, and the TABASCO® Sauce.  The three simple ingredients {tabasco peppers, a small amount of salt, and high quality vinegar} in TABASCO® Sauce make it the perfect ingredient to liven up almost any dish.  With ingredients marinated for three years in wood barrels before the sauce is bottled, TABASCO® Sauce will Flavor Your World!

Mix the guacamole well and top with crumbled queso fresco.  You can add as little or as much as you like.

When the tater tots have finished cooking, remove them from the oven and leave them on the baking sheet or transfer them to a platter and top with the other ingredients.

Add the shredded cheese quickly so it’ll melt on the hot tots, then sprinkle the tater tots with diced tomato, sliced olives, jalapenos, and cilantro.  Add a little queso fresco to the tots, if desired.

Serve alongside a bowl of sour cream and a dish of fresh guacamole …

… and let guests serve themselves.

You could even have other toppings set out so guests can customize their tots any way they want.

These tex mex totchos topped with fresh guacamole infused with TABASCO® Sauce are savory and delicious and perfectly spicy.

Have a couple of extra pans ready to pop in the oven because these tex mex totchos will make the game day crowd excited about more than just the touchdowns!
