Sausage Apricot Breakfast Casserole

The holiday season is approaching quickly and that means lots and lots of guests and entertaining.  While holidays dinners often steal the show, I love hosting brunch for family and friends.  It’s simple, often less rushed, and a great way to slow down during the hustle and bustle.  Whether you have guests staying the night or friends dropping in, this sausage apricot breakfast casserole is the perfect thing to serve in the morning.  And the best part?  You can make it the night before and avoid any last minute craziness!

To make this sweet and savory breakfast recipe, head to your local Kroger store and grab the following ingredients:

6-8 small croissants, split in half

1/2-1 cup apricot preserves

1 pound Jimmy Dean® Regular Pork Sausage

1/8 cup fresh thyme, stripped from the stalk

8 eggs

1 cup milk

1/2 teaspoon salt

1/4 teaspoon pepper

5 green onions, thinly sliced, and

1 cup grated asiago cheese.

Cook and crumble the Jimmy Dean® Regular Pork Sausage with the fresh thyme in a pan over medium to medium high heat until lightly browned.  Tyson® products are the key ingredient for recipes that can be enjoyed during this busy holiday season.

While the meat mixture is cooking, grease a 9×13 pan.  Spread each croissant half liberally with apricot preserves and lay them, face up, in the bottom of the pan.  Cut some halves into smaller pieces to fill in the gaps.

Spread the cooked sausage and thyme mixture over the croissants.

In a bowl, whisk the eggs together then add the milk, salt and pepper, sliced green onions, and asiago cheese. 

Stir well then pour over the contents of the pan.

{At this point, you can cover the pan and store it in the refrigerator overnight, if desired.}

Bake at 350 degrees for 45 minutes or until cooked through.

Let stand for five minutes to set …

… then cut and serve.

    Apricots with sausage isn’t a pairing most people who expect, but it sounds great! Can’t go wrong with Jimmy Dean sausage, either.
