Football viewing is in full swing around my house and I feel like the TV is constantly tuned to a game. While I don’t love football as much as others in my house, I do love football food … and so do they. These mini meatball subs are the perfect game day food. And since they take very little preparation, they’ve scored big points with me too!
I popped in to Walmart for some game day goodies including Budweiser® beer and Old El Paso™ mini soft tortilla taco boats.
These little taco bowls are not only great for tacos but they’re the perfect base for my mini meatball subs because the toppings don’t fall out. They stand up on their own and provide a little pocket for the food. Once you try them, you’ll think of a pile of fun ways to use them. {They’d even be great for a mexican style sundae.}
I really love setting up small food stations and they work really for game day because the food can be kept close so no one misses the play of the day. Rethink the items you have around your house and repurpose furniture as serving stations. Carts are one of my favorite ways to set up a food station because you can use extra shelves or drawers for plates and drinks.
To create a station to serve mini meatball subs, set out a bowl of Old El Paso™ mini soft tortilla taco boats along with a bowl of meatballs. I use storebought meatballs and throw a bag of them in the crockpot along with a jar of marinara sauce and let it cook on high for a couple of hours. You could even set up the crockpot on your serving station to keep everything warm.
Add a pile of toppings and let guests add whatever they like to their subs.
I always include shredded mozzarella cheese, shredded lettuce, sliced black olives, diced red onion, sliced green onion, and sliced jalapenos.
Prepare your mini meatball sub any way you like and pair it with a bottle of Budweiser® to enjoy during the game {the lime flavor is a fun change}.
Grab your guests, turn on the game …
… and get cheering for your favorite team! Or at least your favorite team that actually made it to the playoffs {smile}!
