Mango Kale Mint Smoothie Recipe

Did you make New Year’s resolutions to eat healthier this year?  That doesn’t necessarily mean cutting all the calories … it might just mean adding more fruits and vegetables to your diet and getting a few more nutrients in your body.  If that’s the case, add this delicious mango kale mint smoothie recipe to your list of must-try recipes!  It’s not too sweet, full of all kinds of healthy ingredients, and it’s a great way to get the day started and stick to your resolutions!

To make this mango kale mint smoothie recipe, you’ll need 

1 1/2 cups almond milk or regular milk

1 cup frozen mango chunks

1/2 cup packed fresh kale, torn

2-3 fresh mint leaves, and

1/2 cup frozen riced cauliflower.

Riced cauliflower might sound like a really strange ingredient but you have to try it!  I first heard of using riced cauliflower in smoothies when my son’s girlfriend shared a recipe on her healthy eating instagram account.  It’s the perfect way to add creaminess without the calories and you get the added bonus of some extra nutrients.

Place all the ingredients in a blender and blend well.  I’ve been using a Vitamix that a friend found for me at a thrift store {total score!} so it blends really easily but if the ingredients don’t blend as well in a regular blender, simply add a bit more milk as needed.

If you like your smoothies on the sweeter side, you can also add a bit of honey or agave nectar.  I don’t like things overly sweet so the natural sweetness from the mango is enough for me.

Pour into glasses, add a couple of colorful paper straws {because everything is better with a cute paper straw!}, and enjoy!
