Summer entertaining is so easy but I do love to make something special for time with friends. This Light Strawberry Daiquiri Granita is an icy, refreshing dessert cocktail for adults and perfect for a Girls Night In!
This recipe is so simple to make. Light Strawberry Daiquiri Granita requires only one ingredient: new BACARDI Classic Cocktails Light Strawberry Daiquiri.
This classic cocktail is made with BACARDI rum and one serving is under 95 calories, making it a refreshing and light choice for summer. It’s delicious just poured over ice but refreshing and fun frozen into a granita.
To make this light granita, pour the entire bottle of BACARDI Classic Cocktails Light Strawberry Daiquiri into a glass 9×13 pan and place it in the freezer. After one hour, use the tines of a fork to loosen anything that’s frozen, then scrape it with the tines of a fork every thirty minutes until the granita is frozen. Since the granita is being made with alcohol, it’ll never freeze completely solid, making it easy to scrape down with the fork.
Scoop the slushy mixture into individual glasses and serve with a spoon. If desired, garnish with fresh strawberries, mint, or lime to bring out the natural flavors in the cocktail.
