We grill all year long but in the summer, I grill a handful of times a week. And I love to grill on the weekends. We often spend the day together, swim in the pool, and throw something delicious on the grill then eat outside and enjoy the long summer days. I recently made grilled chicken with fig preserve tea glaze and it was so good {and really simple}. It’ll be a repeat recipe all summer long!
While I was grabbing some household necessities at Walmart, I stopped in the tea aisle and bought Bigelow Earl Grey tea, the perfect quality tea to flavor this glaze. {Plus, I love that Bigelow is a three-generation, family-owned, American company.}
To make this simple four-ingredient glaze, combine one jar {11 ounces} fig preserves and four Bigelow Earl Grey tea bags in a saucepan and stir over low heat. Continue to cook over low heat for about 20 minutes until the tea has infused into the preserves. Remove from heat, remove the tea bags, and stir in 1/4 teaspoon red pepper flakes and 1/2 teaspoon black pepper.
Place chicken on the grill, sprinkle with salt and pepper, and cook for a few minutes. Flip the chicken over and apply the glaze liberally then continue to grill until the chicken is cooked through.
This glazed chicken has a delicious, slightly sweet flavor and pairs perfectly with wild rice and a fresh vegetable.
And every meal is better with an ice cold glass of tea. To make my favorite tea, boil 12 cups of water and steep six Earl Grey tea bags with three Perfect Peach tea bags. Let steep until the tea is dark, remove the tea bags, add 1/4 cup of sugar, and fill your pitcher with ice cubes. You’ll have a refreshing beverage that pairs perfectly with this chicken dish.
You may want to make some extra chicken because leftovers are great on top of a fresh salad {I like to combine spinach leaves, chopped chicken, chopped celery, and sunflower seeds}!
