Cheddar Shrimp Nachos Recipe

I have a new favorite {super easy} recipe that I plan to make all summer long: this cheddar shrimp nachos recipe!  With a combination of blackened seasoning, jalapeno, and cilantro, this recipe is bursting with flavor.  It’s also so simple and quick to make which makes it the perfect snack, appetizer, or light meal!

The star of these nachos is KRAFT Natural Shredded Cheese and now KRAFT cheese is much easier to use because it’s available in a new Stand Up Pouch.  I found the cheese at Tom Thumb {my Safeway store where I take advantage of the Safeway Just For You deals}.

The new pouches contain the same amount of cheese {2 cups} as the old pillow packs but they use less packaging and can stand up on the counter making it easy to reach in and grab what you need.  I love that the cheese package is no longer laying on the counter, spilling out and wasting!  And all the same varieties are still available in this new packaging.

To make these slightly spicy, completely flavorful nachos, you’ll need italian dressing, medium shrimp, red pepper, blackened seasoning, tortilla chips, cheddar cheese, green onion, cilantro, and a jalapeno pepper.

The shrimp is prepared in a hot skillet along with the red pepper and seasonings …

… then finished in the microwave, although you can also melt the cheese in the oven, if desired.

Cheddar Shrimp Nachos Recipe

Yield: 4-6 servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

A delicious and easy nachos recipe with a delightful blend of flavors including blackened shrimp, jalapenos, and cilantro.

Ingredients

  • 2 tablespoons KRAFT Zesty Italian dressing {divided}
  • 3/4 pound frozen cooked cleaned medium shrimp {thawed}
  • 1 chopped red pepper
  • 1 tablespoon blackened seasoning
  • 6 cups tortilla chips
  • 1 package {8 ounces} KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
  • 1 chopped green onion
  • 2 tablespoons chopped fresh cilantro
  • 1 thinly sliced jalapeno pepper

Instructions

  1. Heat a large skillet until it is very hot.
  2. Add 1 tablespoon Italian dressing, shrimp, red peppers, and seasoning; cook and stir 1-2 minutes or until the shrimp is heated through and evenly coated with the dressing mixture.
  3. Stir in the remaining dressing.
  4. Cover a large microwaveable plate with a layer of half each of the chips, shrimp mixture, and cheese. Repeat the layer.
  5. Microwave on high for 1-2 minutes until the cheese is melted.
  6. Top with onions, jalapeno, and cilantro and serve.
