Happy St. Patrick’s Day!  Are you wearing green and preparing the corned beef?  All of the above at our house plus a bit more today.  Inspired by the Irish and a little Dr. Seuss, we started our St. Patrick’s Day with a little green eggs and ham breakfast …

I made a quick trip to Walmart this week for Petit Jean Meats and the rest of our breakfast supplies.

I love Dr. Seuss and I’ve probably read Green Eggs and Ham at least a hundred times.  I thought it would be fun to take a line from the book and incorporate it into our breakfast.

Would you like them with a mouse?

Why yes, I believe we would.

I scrunched refrigerator biscuits into a mouse shape and added almond ears, dots of red food coloring for eyes, and a honey tail.  My kids loved them!  I have to say, I kind of loved them too.  Biscuit mice are so much cuter than the real thing.

I cut slices of Petit Jean smoked ham in half and heated them up in a frying pan, just enough to brown them slightly and draw out the flavor.  No recipe needed.  We all really enjoy the great flavor of Petit Jean ham {and kind of like the fact that it’s got some Texas ties … it’s the official ham of the Dallas Cowboys, you know}.  One of these days I’d like to try Petit Jean bacon as well but it’s not carried at Walmart right now.

You can’t do Dr. Seuss right without the green eggs so I mixed up a batch of scrambled eggs and added some neon green food coloring.  I have to say, I’ve made green eggs before and the neon coloring was a lot more edible looking than the regular stuff.  As far as green eggs go.

I couldn’t resist adding a little St. Patrick’s Day fun to the deal so the kids drank green milk with rainbow straws {inspiration found here}.

 My family loved getting up for a fun Saturday breakfast, especially my three younger kids.

Some came dressed like princesses …

… and others insisted on wearing touches of green to avoid the pinching that goes on in this house on this particular day.

Our Green Eggs and Ham breakfast was a great way to start a soccer-free, end-of-spring-break St. Patrick’s Day.

    Cute mice! We had green crepes. Your milk is about half the price of ours!
