There’s nothing quite like homemade ice cream, is there? I love unique ice cream blends and decided to whip up a little concoction based on a flavor I read about at a New York City ice cream shop. This gourmet goat cheese rosemary honey no-churn ice cream recipe {that’s a mouthful!} is creamy, full of flavor, and so easy to make! While I love my ice cream maker, there’s something to be said for ease and simplicity and no-churn ice cream is about as easy as it gets. Whether you copy this recipe or use it as inspiration for your own summer ice cream blend, enjoying homemade ice cream is the perfect way to embrace summer!
To make goat cheese rosemary honey ice cream, you’ll need heavy cream, sweetened condensed milk, goat cheese, honey, and fresh rosemary.

Using an electric mixer {my orange mixer is my favorite!}, blend the sweetened condensed milk with the goat cheese and honey. Don’t worry about lumps … those little lumps are a tart and delicious part of this ice cream!
Stir in the chopped rosemary.
In a separate bowl, whip the heavy cream until it forms stiff peaks …
… then fold it into the goat cheese mixture.
Pour it into an 8×8 pan, smooth it out, and place it in the freezer for about four or five hours.
When the ice cream is fully frozen, it’s ready to serve.
Scoop it up …
.. garnish as desired, and enjoy this sweet and savory blend of ice cream!

I made this once and was delish!! It was almost too sweet for me with the sweetened condensed milk. Do you think it would work if used half evaporated milk and half sweetened condensed instead of the whole thing of sweetened condensed milk?
