My slow cooker is a complete lifesaver. I love getting to the end of the day and having a hot meal ready to serve, especially on the nights we’re rushing out for a sports practice or other activity … and with a house full of kids, those nights are frequent. This easy slow cooker chicken tikka masala is super simple {only five ingredients}, completely delicious, and has an international flair that’ll spice up any weeknight! It’s simple enough to please the kids {even my picky one!} but interesting enough to serve to guests which makes it a total win in my kitchen!
I stopped by my local Cost Plus World Market in Flower Mound to grab some of the ingredients for this dish {you can see all the links for Cost Plus World Market items at the bottom of this post and you can find your local Cost Plus World Market here}.
You’ll need
4-6 boneless skinless chicken breasts or tenderloins
2 12.5 ounce jars of Maya Kaimal Tikka Masala Indian Simmer Sauce
2 fresh carrots, sliced
1 15.5 ounce can of chickpeas
1 cup fresh baby spinach leaves, and
basmati rice.
{If you love repurposed projects as much as I do, be sure to save that zippered bag the rice comes in! I’m definitely turning mine into something fabulous!}
Grease your slow cooker and place the chicken breasts or tenderloins side by side in the bottom. {If you don’t have a slow cooker, this dish could also be cooked in an oven or on a stovetop in a Dutch Oven or other cookware.}
Sprinkle with the carrot slices.
Pour both jars of Tikka Masala sauce over top, cover with the lid, and cook on High for 3-4 hours or Low for 7-8 hours.
While the slow cooker is doing its thing, you can whip up some spicy crackers to serve with this dish. Naan from Cost Plus World Market is my favorite side but if your store is out of it, make these garlic coriander crackers instead! Place cream crackers side by side on a baking sheet, spray lightly with olive oil spray, sprinkle generously with garlic salt and coriander, and bake at 350 degrees for about 5-6 minutes or until lightly browned.
The garlic and coriander is a perfect complement to the flavors in the simmer sauce. And a little tip for any leftover crackers: they make delicious dippers for hummus!
Prepare the basmati rice about thirty minutes before meal time … or make it the day before and heat it in the microwave if you know your evening will be rushed.
When the chicken is fully cooked, remove the breasts from the sauce and cut or shred them up then stir them back into the sauce. Add the can of chickpeas {drained} and the fresh spinach leaves, give it all a stir, and serve over the rice.
This slow cooker Indian stew is savory goodness in a bowl! It’s so good that you can hardly believe it’s as easy as it is.
With so little prep time and the ease of slow cooking, this recipe is one to add to the regular meal rotation.
