I have the best summer side dish recipe to share with you today: easy cashew coleslaw salad! My Mom first made this when she stayed with us one time and it’s quickly become a favorite recipe in our house. It only has a few ingredients, is bright and crunchy, and the flavor combination is perfect. It makes an ideal side dish for a summer barbecue or potluck dinner but we love it year round and I’m sure you will too!
The few ingredients sound like a very strange combination but they blend together to make a fresh, delicious summer salad that perfectly complements your favorite grilled recipe.
Cashew Coleslaw Salad Recipe
To make this cashew coleslaw salad recipe, you’ll need packaged coleslaw {I like to use the package that also has shredded carrots and purple cabbage in it}, frozen peas {don’t thaw them prior to making the salad}, cashews, and poppy seed dressing.

Toss the ingredients together and serve.
Refrigerate any leftovers. Unlike most salads, this one will last in the fridge without becoming wilted for about twenty-four hours after you make it.
I’ve never served this coleslaw recipe when it hasn’t been gobbled up and received rave reviews from everyone! It’s truly a summer favorite at our house.
