It’s my favorite time of year and one of the reasons I love the holiday season is because I’m so much more intentional about entertaining and having friends over.  While it seems a bit counter-intuitive to entertain during the busiest time of year, having friends over doesn’t have to create stress or be filled with fanfare.  Ditch the expected dinner plans, host a morning brunch, and let guests make their own breakfast with a DIY breakfast burrito bar.  All you have to do is provide the burrito fillings … and even that can be simple!

I love hosting brunch because the overall tone is just more relaxed.  With a few simple details and some delicious food, brunch can feel just as festive as a candlelight dinner.  And with busy holiday calendars, it’s often easier to squeeze in a Christmas or New Year’s brunch.

I popped in to my local Walmart to buy everything I needed for a breakfast burrito bar.  I stopped in the party aisle for some streamers, plates, and napkins {because colorful paper plates look good and make clean up easy} and then grabbed the ingredients I needed for breakfast burritos.

While the main ingredients like Chipotle Black Bean Crumbles™ and Steak Strips are a key component to a good burrito bar, the toppings seal the deal and allow guests to really customize their burrito the way they like. 

This simple four-ingredient spicy chipotle blender salsa pairs perfectly with the Chipotle Black Bean Crumbles™ and adds a little fire to a burrito!

To make this blender salsa, you’ll need two large roma tomatoes, a quarter of a large onion, 1-2 tablespoons chipotles in adobo sauce {depending how spicy you like it}, and 1/2 of a green pepper.

Coarsely chop the ingredients, toss them in the blender, and purify.

The result is a smooth and spicy restaurant-style salsa that has just the kick to wake you up!

To set up a burrito bar, set out bowls filled with all the goodies.

Start with a stack of tortillas and your chosen protein …

… and provide all the toppings you love: diced tomatoes, salsa varieties, cooked diced potatoes, jalapeno slices, sauteed onions and green peppers, and chopped avocado.

Besides delicious ingredients, all you need for a really festive affair are a few DIY details that add a bit of fiesta flair.  Crepe paper streamers are my favorite and you can find them anywhere for cheap.  Buy a few bright colors and you’ll have enough for all the decor you’ll need.

Cut strips long enough to wrap around the glasses, layer them and cut them like a fringe …

… then wrap them around the glasses or bottles and attach them with a dab of hot glue {put the glasses or bottles in the freezer for a few minutes after the party and the glue will pop right off}.  For colorful variety, alternate the top color in the layered fringes.  Add some coordinating paper straws and you have cute fiesta-themed glasses to go with the burrito bar.

Add colorful plates, napkins, and cutlery …

… and set up a simple backdrop for the burrito bar.

Add a chalkboard sign or a letter board with simple instructions then layer long pieces of crepe paper streamers, fringe them the same way you did for the glasses, and string them behind the burrito bar.

If you want more of a traditional holiday party, eliminate the extra colors and stick with red and green.

Add some paper straws in holiday colors …

… hang some red and green fringe garland and add a little fun to the burrito sign!

That’s all you need for a simple but memorable fiesta with friends … and the perfect way to entertain this holiday season!

    That is such a great idea! I think a breakfast burrito bar is the perfect way to start the day after a long night of sleepover fun. My girls are going to love it. And my son will love it for putting up with all of them. LOL
