A Freezer Meal :: Cranberry Chicken

During the school year, meals take a lot of creativity.  Dinner time is often rushed because of sports practices and games or other evening commitments and I rely on my crockpot or freezer meals to stay sane.  Today I’ve got a super easy freezer meal recipe to share with you: cranberry chicken.  It’s not only quick to throw in the freezer but it’s absolutely delicious.

To make this meal, you just need a few ingredients: as many chicken breasts as you’ll need for your family {I use frozen chicken and I leave it frozen until I’m ready to actually thaw and cook the meal}, a can of whole berry cranberry sauce, 8 ounces catalina or french style dressing, and a package of dry onion soup mix.

Add everything except the chicken into a freezer bag and mix {I just squeeze the bag with my hands to mix it} …

… then add the chicken and make sure it gets completely coated in sauce.

Seal the freezer bag, ensuring all the air is removed, and label it with the name and date.

Pop it in the freezer.  {I always lay the bag flat and allow it to freeze like a small pillow so that it’ll take up very little room in the freezer and can be easily stacked.}

When you’re ready to eat the meal, thaw it completely {the chicken will marinate as it thaws} and grill the chicken {I like to grill everything} or place it in a greased baking dish {along with the sauce}, and bake at 350 degrees for 1 to 1/2 hours or until completely cooked.

The flavor of this cranberry chicken is absolutely delicious … my entire family loves it.

      I was wondering the same thing … I’m sure you could. I’d probably just do it on high for 3-4 hours.

    I usually only think of cranberry with turkey at Thanksgiving, but I really like this idea! Most certainly going to try it soon, it looks fabulous!
