Zesty Chicken Pasta Salad

Mealtimes are often a super busy time around our house. With five kids, we have a lot of sports practices and other commitments but family dinner is super important to me even if we just sit down together for a few minutes. And having something to eat that’s quick and delicious is also super important. This zesty chicken pasta salad is full of fresh vegetables and protein-packed chicken {making it a one-bowl meal}, can be made ahead to avoid last minute craziness, and is something my whole family will eat. A total score for busy weeknight dinners.

To make zesty chicken pasta salad, you’ll need to pop in to Walmart for the ingredients.

{I like to make a huge bowl to feed my family of seven and possibly have leftovers for lunches. If you have a smaller crowd, just cut down on the amount of pasta you make.}

You’ll need a package of Tyson® Grilled & Ready® Chicken {I like to use the Oven Roasted Diced Chicken Breast}, a bottle of Wish-Bone® Italian Dressing, two boxes of radiatore pasta {rotini will also work fine but radiatore is my favorite because the dressing sticks in all the crevices and makes the salad really flavorful}, one green pepper, one red pepper, two stalks of celery, a container of grape tomatoes, one small can of sliced black olives, and 1/4 cup of grated parmesan cheese.

Cook the pasta according to the package instructions then drain and rinse with cold water.

Thaw the chicken beforehand so it’s ready to use. Although I use the diced chicken, I like to cut it even smaller so the pieces blend really well into the salad. Tyson® Grilled & Ready® Chicken is such a simple and convenient way to provide a delicious, protein filled meal for the family.

Chop the green and red pepper and celery stalks and cut the tomatoes in half …

… then toss the chicken, vegetables, and olives in a large bowl with the pasta. Add the parmesan cheese and toss with the dressing. I use about half a bottle of dressing but add as much as you like to get the robust, full flavor you want. Wish-Bone® Italian Dressing is packed full of herbs, seasonings, and flavors for an extra zesty boost of flavor {and it doesn’t contain high fructose corn syrup}.

Serve immediately or cover with plastic wrap and put it in the fridge until dinnertime.

The whole family will enjoy this hearty, flavorful meal and you’ll feel good about serving your family a homemade dish … even if it’s rushed {wink}.
