Tropical Pasta Salad

It’s the last week of school and, in just a few days, the kids will be home all day every day. While I love having them around, it means that I won’t see my friends as much because we’ll all be busy with our kiddos. Before summer break hit, I hosted a little luncheon for some of my friends … and featured a secret ingredient in my recipes!

Because simplicity is my mantra for entertaining, I used paper plates and napkins in bright colors and layered different fabrics to give the table some texture and color …

… and I set out lidded mason jars with colorful paper straws. Bright colors and festive touches just instantly make it feel like a party.

When my guests arrived, I revealed the secret ingredient: new Silk Coconutmilk, a heart-healthy milk alternative! And instead of just drinking it, I added it to some light summer recipes!

For the main course, I served a tropical pasta salad. To make this recipe, you’ll need:

a box of pasta {cooked and drained}, 1 cup fresh blueberries, 1 cup fresh pineapple {canned would work too}, 1 cup chopped cooked chicken, 1 cup grapes {halved}, and 1 cup orange slices {canned are fine}.

Toss all the ingredients together and then add the dressing.

To make the dressing, in a blender combine 1 cup of Silk Coconutmilk, 1 can drained peaches, 1 teaspoon salt, and 1/2 cup peach preserves.

Serve with shredded coconut and chopped macadamia nuts or stir them right into the salad.

I served the pasta salad with fresh rolls …

… and a simple storebought dessert.

And it’s always fun to serve a specialty drink for a fun luncheon or get-together. I served my guests a pitcher of coconut chai tea.

To make this tea, boil 4 cups of water, add 10 black tea bags, 2 cinnamon sticks, and 1 teaspoon of cloves, and let steep until the tea is quite dark, about 20-30 minutes. Remove the tea bags and strain the tea to remove the cloves and cinnamon, then stir in 2 cups of Silk Coconutmilk and 1 teaspoon of vanilla. Refrigerate until chilled, serve over ice, and enjoy!
