Roasted Broccoli Smoked Cheese Soup

This roasted broccoli smoked cheese soup was created as part of a sponsored post for World Market.  All thoughts and opinions are my own.

Tomorrow is the first day of September and I can’t wait!  I love fall and the soup eating, sweater wearing days that come with it.  It’s also one of my favorite times of year to entertain and a soup swap is a fun way to host friends and family.  It’s like a potluck with style!  And this roasted broccoli smoked cheese soup is a savory twist on the classic and perfect for a crowd.

To host a soup swap, simply invite a group of friends or family {next week I’ll share printables for hosting a soup swap} and ask everyone to bring a pot of their favorite soup.  Set a buffet with all the soups and allow guests to help themselves, sampling a little of each soup or having a big bowl of a favorite.

Set the table with pretty bowls {I found so many beautiful entertaining essentials at my local World Market store in Flower Mound, Texas, and ordered a few other items online}, seasonal colors with a contrasting splash, and sit down for an enjoyable time with friends!  You’ll love the ease of a soup swap and it might even become an annual tradition.

Want the recipe for my roasted broccoli smoked cheese soup?  It’s so easy and so good!

You’ll need 

1 1/2 pounds of broccoli florets

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon pepper

4 cups chicken broth

8 ounces smoked roasted garlic cheese

8 ounces smoked gouda

2 cups milk

3 tablespoons cornstarch, and

3 tablespoons cold water.

Cut the broccoli into pieces and place it on a baking pan.  Drizzle with olive oil, sprinkle with salt and pepper, and roast at 425 degrees for about 15 minutes or until tender.

Set aside.

In a large pot, heat the chicken broth over medium low heat and shred the cheese into the pot.  Stir regularly until the cheese melts but don’t allow the mixture to boil.

When the cheese has melted, add the milk and stir.

In a cup, combine the cornstarch with the water and dissolve completely, then stir it into the soup and stir until the soup begins to thicken.

Use a food processor to coarsely chop the broccoli and stir it into the soup.

Place the soup in a large serving bowl and your contribution to the soup swap is ready!

Not much else is needed for a successful soup swap but, to complement the hearty soups, I like to set out a cheese board that doubles as a centerpiece.

Place a long cutting board in the center of the table and add a selection of cheeses, crackers, breadsticks …

Then gather around, let time slow down just a little, and enjoy delightful conversations, sweet friendships, and good food!
