Entertaining your girlfriends this summer?  Or hosting a summer brunch for the adults?  Don’t just serve mimosas … serve mimosa popsicles!  They’re the trendy way to cool off and still enjoy a grown up treat.

You can make your own mimosas or buy a storebought version {both are delicious}.  If you go with the homemade version, combine 2 parts orange juice with 1 part champagne or sparkling wine.

Freeze in popsicle molds until solid.  Because of the alcohol content, these popsicles won’t freeze super hard but they will freeze well enough to hold their shape.  Serve them as a popsicle or serve them in a glass of champagne.  Either way, you’ll enjoy this refreshing summer grown-up treat!
