Individual Chicken Pot Pie Puffs

It’s September which means the start of one thing: rushed weeknight dinners.

Am I right?

Whether it’s an onslaught of homework and studying, another sports practice, or church and youth group commitments, weeknights are often rushed.  With five kids in our house, we have a full calendar and that’s why menu planning and quick {preferably less than 30 minutes} meals are so important around our house.  I plan our dinner menus and the corresponding grocery list a week in advance and I plan our meals around the day’s activities.  Lots of activities in a day means scheduling a quick meal and these individual chicken pot pie puffs fit the bill!

I mixed Pillsbury Grands! Biscuits with a few fresh ingredients and had a quick, fun dinner that my whole family enjoyed {and leftovers that were perfect for popping in lunchboxes}.

I made a triple batch of Grands! Chicken Pot Pie Puffs {click for the full recipe} and added some extra shredded carrots {my kids are veggie lovers so I try to add extra vegetables when I can} as well as some shredded cheese on top.  By prepping the ingredients {the carrots and chicken} ahead of time, getting our dinner on the table took very little time … perfect since I’m usually helping the twins with homework and wrangling a four year old.

Since my family loved this Pillsbury Grands! recipe, I’m looking forward to trying some of the others as well.  The Grands! Taco Melts and the Grands! Unsloppy Joes have already been added to the meal schedule.
