Easy Lime Cheesecake Dip

Do you start craving citrus flavors like lime and lemon as spring approaches?  Those flavors just seem so perfect for spring and summer … light, tart, and a perfect complement for almost anything!  This easy lime cheesecake dip has just a few ingredients and it’s so good.  You can serve it alongside fresh fruit like strawberries or apple slices or with sweet and savory dippers like vanilla wafers and pretzel thins.  Either way, the tart taste is sure to delight {my youngest was licking the bowl clean}… and you’ll love that it can be whipped up quickly!

To make this lime cheesecake dip recipe, you’ll need

4 fresh small to medium limes

1 8-12 ounce container of whipped plain cream cheese

1 8-12 ounce container of marshmallow creme, and

1-2 teaspoons sweetened condensed milk, if you desire a bit more sweetness.

In a medium sized bowl, whip the cream cheese and marshmallow creme together with a fork or whisk until it’s well blended.  The whipped cream cheese makes it much easier to get a smooth consistency but if you only have a regular block of cream cheese in your fridge, that will work as well.

Once those two ingredients are combined, add the juice from four lemons and stir well.  The dip will thin a bit but you can refrigerate it for a brief period of time to thicken it up or serve as is.

If you like things on the sweeter side, add a bit of sweetened condensed milk and blend well.

This dip is absolutely delicious with fresh strawberries but we also love the sweet and salty combination you get when you serve it with pretzel thins.
