I’ve tried a few different recipes for red beans and rice and combined a few different ideas to come up with this crockpot version.
It has great flavor and manages to sneak in a number of vegetables, which is perfect if you’ve got kiddos that are a bit picky. Once the vegetables have cooked in the crockpot all day, they blend right in with the beans and most kids won’t even notice them.
This dinner idea also requires no pre-planning since the dry beans don’t have to soak in advance or overnight. A total score.
How to Make Red Beans and Rice in the Crockpot
To make this recipe, you’ll need a pound of dried small, red beans, turkey sausage {or any sausage variation}, celery, a green bell pepper, a red bell pepper, an onion, garlic cloves, and creole seasoning.
You’ll also need to prepare white or brown rice separately to serve with the red beans.
{Ingredient measurements and full instructions for this recipe can be found in the recipe card further down in this post.}
Cover with the lid and cook on High for 8 hours or until the beans are completely tender.
Serve the red bean mixture over hot cooked rice, and if desired, add hot sauce {I always do}. I promise, you’ll love this delicious recipe for red beans and rice!
And if you have leftovers, be sure to save them! Simply store them in an airtight container in the fridge … leftovers are delicious reheated the next day!
