Chocolate Peanut Butter Waffle Pops

Last month waffle pops became all the rage when instagram was full of photos from a certain music and arts festival out in California!  I was instantly smitten with the idea and added waffle pops to my never-ending list of things I want to try!  These chocolate peanut butter waffle pops are a really fun dessert, hugely popular with the kids, and you can create your own version with any of your favorite toppings!  I already have lots of ideas for combinations I want to try!

To make these chocolate peanut butter waffle pops, you’ll need

store bought or homemade waffle mix, enough to make 4-6 square waffles

1 bag of chocolate chips

1 cup of creamy peanut butter, and

2-3 packages of peanut butter cups.

You’ll also need one popsicle stick for each waffle.  The large popsicle sticks work best to hold the weight of the waffle.

Using a waffle maker, make the waffles according to the package instructions, stirring 1 cup of chocolate chips into the batter, and allowing them to cook long enough to make them quite crisp.  You don’t want the waffles to be floppy on the stick.

As soon as you remove the waffles from the waffle maker, gently slide a popsicle stick into the middle of each one.

While the waffles are cooking, use the microwave to melt the remaining chocolate chips and peanut butter {in separate bowls} and coarsely chop the peanut butter cups.

Dip each waffle into the melted chocolate, covering the waffle halfway.  Sprinkle with the chopped peanut butter cups …

… and drizzle the waffle pops with the melted peanut butter.

Serve warm or allow the chocolate and peanut butter to harden before serving.

… and I won’t tell anyone if you eat them for breakfast {wink}.
