I love a challenge and the Chopped At Home Challenge is just fun: to use cauliflower, crimini mushrooms, leeks, and Sargento Sharp Cheddar Fine Cut cheese to create a dish that could be classified as comfort food. This cheesy cauliflower leek quiche fits the bill!
To make this quiche, you’ll need a nine-inch frozen pie shell, Sargento Sharp Cheddar Fine Cut cheese, a head of cauliflower, two leeks, one cup of crimini mushrooms, six eggs, 3/4 cup chicken broth, olive oil, butter, and salt and pepper.
Place the empty pie shell in a 400 degree preheated oven and bake for five minutes then let sit while you prepare the rest of the ingredients.
Chop the leeks and saute them in 1 teaspoon olive oil over medium heat for a couple of minutes.
Add one head of coarsely chopped cauliflower, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 3/4 cup chicken broth and cook over medium heat for about ten minutes until the cauliflower is soft.
While the vegetable mixture is cooking, chop one cup of mushrooms and, in a separate pan, cook in 1 tablespoon of butter over medium heat for about five minutes.
Combine the mushrooms with the cauliflower vegetable mixture, add six beaten eggs, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Add 1 cup of Sargento Sharp Cheddar Fine Cut cheese. Cut from blocks of 100% real, natural cheese, Sargento has unique blends and distinct cuts and adds the perfect flavor to this quiche.
Mix together and pour carefully into the pie pan.
Bake at 400 degrees for 20 minutes or until cooked through. Let sit for a few minutes to set then serve in slices for a delicious brunch or a light lunch or dinner.
