Chocolate Mousse-Filled Cupcakes

I really like celebrating everyday moments and random holidays … it’s a fun way to brighten up mundane days and weeks.  Tomorrow is National Make a Difference Day when neighbors celebrate neighbors.  We live in a great neighborhood with some really amazing people and celebrating that seemed like a great idea so I whipped up a batch of easy chocolate mousse-filled cupcakes to deliver to a few special people!

My kids think all celebrations should include cupcakes {and I tend to agree} so I went to Walmart to buy a few supplies for an impromptu celebration.

Eli told me these were the best cupcakes I’ve ever made!

I baked regular chocolate cupcakes {I baked these from a mix but you could definitely use your favorite cupcake recipe, if you have one} …

… used a spoon to scoop out a little hole in the middle of each cupcake …

… and filled the holes with mocha mousse.  

I used storebought mousse mix and added a teaspoon of instant coffee.  The hint of coffee was a delicious surprise, especially if you’re like me, and feel like coffee can only make everything better!

I used new frozen Cool Whip Frosting to top the cupcakes and I piped it on in a rosette shape.  This was the first time we’ve tried this new frosting and the whole family loved it.  It has a homemade taste and it’s truly the best storebought frosting I’ve ever tasted.  Delicious!

The final touch to our cupcakes: a tiny sprinkle of Himalayan pink salt on top.  The hint of salt mixed with the creamy chocolate frosting was perfect.

I wanted to deliver the cupcakes to our neighbors on a disposable plate but I fancied it up a bit by punching holes around the edge of the plate and weaving ribbon through it.  So simple but it made the plate look really pretty … much better than a plain old paper plate.

Tomorrow {on National Make a Difference Day} we’ll deliver our cupcakes but we made an early delivery to our very favorite neighbors, our grandparents!

We also saved a few cupcakes for ourselves along with a promise that I’ll bake another cake soon and frost it with Cool Whip Frosting … it’s a new family favorite!
