Today is Teacher Appreciation Day at our homeschool co-op. Since the kids have many, many teachers that work with them each week, I wanted to come up with an economical way to say thank you so we mixed up little bags of snickerdoodle snack mix. If you haven’t tried this mix or something similar before, this is a delicious recipe. You can whip it up in no time, it’s fairly inexpensive to make, and it’s so good … and a bit addictive, so be warned {wink}.

How to Make Snickerdoodle Snack Mix
To make this flavorful snack mix, you’ll need sugar, ground cinnamon, cinnamon chex cereal, chocolate chex cereal, popped popcorn, and butter.

{For a little added variety, you can also add some mix ins to this recipe. Mini marshmallows, chocolate chunks, or even small candies are some of our favorites.}

This recipe is quick and easy because much of the work happens in the microwave. That also makes it a kid-friendly recipe in terms of helping out in the kitchen. Even if you don’t want your kids using the microwave, they can definitely help with stirring.
You’ll melt the butter, blend it with the other ingredients, then microwave the whole batch and spread it out on parchment paper or wax paper to cool.

Let the snack mix cool completely then store it in an airtight container.
If you’re going to give it as gifts, package small amounts in cute cellophane bags {they can be found at most grocery or craft stores this time of year} or little mason jars.
Add a simple tag and you have a sweet gift to give to teachers, neighbors, or friends.

This sweet snack mix is a favorite, especially during the holiday season, and always a hit when we give it as a gift.
You’ll probably want to double the batch so you can keep some for yourself {wink}.

A quick and easy snickerdoodle flavored snack mix. 1. In a small bowl, mix together the sugar and cinnamon and set aside. 2. In a large microwaveable bowl, mix together the cereals and popcorn. 3. Melt the butter in a separate bowl in the microwave for about 40 seconds or until melted. 4. Pour the butter over the cereal mixture, stirring until evenly coated. 5. Microwave for 2 minutes, stirring halfway through. 6. Sprinkle half of the sugar and cinnamon mixture over the cereal mixture and stir, then sprinkle with the remaining sugar mixture and stir again. 7. Microwave 1 minute longer. 8. Spread on waxed paper and parchment paper to cool then stir in an airtight container.
