Hash Brown Cups

I love simple recipes with a twist … something that has a delicious taste but takes a regular recipe up a notch.  These hash brown cups not only have a delicious flavor but they look great too.  They’re the perfect side dish for brunch!

These delicious hash brown cups are one of the seventy recipes in Muffin Tin Meals {affiliate link}, a new book by fellow blogger Melanie LaDue.  I’m sharing this recipe with permission and I’m sure it’ll inspire you to buy the book and try the others.

Muffin Tin Meals has breakfast and main dish recipes, sweet treats, fun recipes to make with the kids, holiday and party treats, and many others, all baked up in muffin tins!  The recipes are easy, don’t involve a lot of prep work or ingredients, and will inspire you to see what else you can cook up in a muffin tin!

This recipe takes no time at all to prepare.  In a large bowl, stir together a 20-ounce bag of shredded hash browns, two chopped green onions, 1/4 cup parmesan cheese, one teaspoon salt, and pepper to taste.  Add 2 tablespoons olive oil and toss with a fork.

Spoon the mixture into muffin cups, filling them and then pressing down to pack the mixture.  Bake at 350 degrees for 60 minutes or until the hash browns are browned and crispy.

Let them cool for five minutes then pop out of the tin and serve.  Garnish with a few sliced green onions and serve alongside your favorite egg or other breakfast dish.  You’ll truly be surprised how great they are … the parmesan adds the perfect punch of flavor.
