Turkey Bacon Egg Cups

I made a quick and easy brunch recipe yesterday and I have to share it with you.  These turkey bacon egg cups are simple to make and they look a bit more special than plain ol’ bacon and eggs.  I used turkey bacon but you could also make them with regular bacon {if you use regular bacon, I would partially cook the bacon first and then continue with the rest of the recipe}.

To make the bacon egg cups, circle a piece of bacon around the outside of each cup in a muffin pan.  Cut circles out of bread using a cookie cutter or the top of a glass and place a bread circle into the bottom of each bacon circle.  Crack an egg over the bread and sprinkle with salt and pepper.

Bake at 400 degrees for 12-15 minutes {12 minutes will give you a slightly runny yolk and 15 minutes will give you a firm yoke}.

Serve with fruit {or a side of carb overload like we did}.
